Baked lentil and veggie croquettes

Recipe Ingredients for Baked Lentil Croquettes

2 cup Lentils, Mature Seeds
3 medium (4-1/8" long) Onions, Spring Or Scallions
1 carrot (7-1/2") Carrots
3.5 stalk, large (11"-12" long) Celery
2 clove Garlic
3 medium Egg, Whole
79 1/5 grams Bread Crumbs, Dry, Grated, Seasoned
1.5 1tsp Olive Oil
1 tsp Cumin
1 tsp Oregano, Ground
2 tsp Salt, Table

Recipe Directions for Baked Lentil Croquettes

  1. Preheat oven to 350 and grease a baking sheet.

  2. Prepare lentils according to instructions and without any salt or seasoning. You want about 2 cups cooked (usually about .75 cups dry).

  3. Dice the scallions, celery, and garlic. Grate the carrot.

  4. Combine all the diced and grated veggies in a bowl and mix with the three eggs.

  5. Add the cooked and drained lentils to the veggies and eggs and mix well.

  6. Add in bread crumbs little by little, mixing well, until you achieve a texture that will let you form balls or patties from the mixture. This should be about half a cup of bread crumbs.

  7. In a seperate plate mix the remaining bread crumbs with 1.5 tbsp of Olive Oil.

  8. With your (clean hands), form small balls (about 2 inches in diameter) from the veggie/lentil mixture. (you could also form the balls into patties). Roll the balls in the bread crumb-olive oil mix, covering the outside surface with the mixture. Place balls on greased baking sheet about an inch apart.

  9. Bake at 350 for about 45 to an hour. Croquettes are done when they are firm and slightly browned on the outside. This recipe yields about 8 croquettes and I usually eat two along with a side of veggies or a salad for a meal.
