Juicy, tender and tasty chicken with mushrooms. An easy weeknight meal that's simple to prepare.

Recipe Ingredients for Baked Lemon Chicken with Mushroom Sauce

4 oz Chicken Breasts
1 tbsp olive oil
1 fruit+2-3/8"+dia lemon
1/4 cup butter
3 cups mushrooms
1/2 cup chicken broth
2 tbsp flour
1 tbsp parsley leaves (optional)
1 Salt to taste
1 Pepper to taste

Recipe Directions for Baked Lemon Chicken with Mushroom Sauce

  1. Preheat oven to 400 degrees F

  2. Place olive oil in 8x8 glass dish

  3. season both sides of chicken with salt and pepper

  4. Place chicken in dish, coating each side with oil

  5. Squeeze juice of 1/2 lemon over chicken

  6. Slice the remaining lemon and place on top of chicken

  7. Bake chicken for 30 - 35 min (no longer pink)

  8. In large skillet, melt the butter

  9. Add mushrooms to skillet

  10. Saute for approx 5 min

  11. Sprinkle with flour and stir

  12. Add Chicken broth, stirring to make a medium thick sauce

  13. Allow to reduce, adjusting with a little more broth to make a creamy sauce.

  14. If you like, add parsley at the last minute.

  15. Taste and adjust seasoning with salt and pepper.

  16. Spoon the sauce over the lemon baked chicken and serve.

  17. You can serve with rice, but that isn't included in the nutritional facts.
