Baked (not fried!) jalapeno poppers

Recipe Ingredients for Baked Jalapeno Poppers

5 pepper Peppers, Jalapeno
2 oz Fat Free Cream Cheese
1 large Egg, Whole
1/2 cup Bread Crumbs
1/4 cup Cheddar Shredded Cheese

Recipe Directions for Baked Jalapeno Poppers

  1. Preheat oven to 350 degrees. Spray a baking sheet with cooking spray. Crack egg into a small bowl and beat lightly; pour panko into another small bowl.

  2. Remove the stems from the peppers and halve them lengthwise. Remove the seeds and ribs from the insides; rinse and dry well.

  3. Combine cream cheese, shredded cheddar, and a sprinkling of garlic powder (optional) in a bowl. Divide the mixture evenly amongst the pepper halves and smooth so that the peppers are filled evenly.

  4. Dip the top each filled pepper half first in beaten egg then into the panko. Place the peppers evenly spaced on the baking sheet.

  5. Bake at 350 degrees for 25-30 minutes. If you like your poppers spicier (like me!) only put them in for 25 minutes; if you prefer them on the milder side, cook them for 30 minutes. Let cool for a few minutes before eating.
