Recipe Ingredients for Baked Honey-Mustard Chicken Thighs

4 clove Garlic
4 oz Whole Grain Dijon Mustard
7 tbsp Honey Squeezable
0.5 tsp, ground Thyme, Dried
0.13 tsp Spices Cayenne Pepper
12 serving Chicken Thighs Boneless Skinless
2 small Peppers, Sweet, Green
2 pepper, large (3-3/4" long, 3" dia) Peppers, Sweet, Yellow
0.13 1tsp Vegetable Oil, Canola
30 grams Almonds Slivered
30 grams Parsley

Recipe Directions for Baked Honey-Mustard Chicken Thighs

  1. In a small bowl, combine garlic, mustard, honey, thyme and cayenne. In a large zip-top bag, combine chicken and 2/3 mustard mixture and massage bag to coat chicken. Refrigerate for 8 hrs or overnight. Cover and refrigerate remaining mustard mixture.

  2. Arrange oven rack in highest position. Preheat broiler to high and line baking sheet with foil. Chop peppers into fourths and arrange outsides up on baking sheet. Brush with canola oil. Broil until tops are black 8-10 mins. Immediately transfer peppers to large bowl and cover tightly with plastic wrap. Set aside until cool enough to handle. With your fingers, peel off blackened skin; set aside.

  3. Arrange oven rack 7-8 inches from top element. Using the same baking sheet as peppers (leaving and oils on foil), place chicken on sheet shaking off excess marinade. Broil on high until tops are golden, 7-10 min. Turn and boil until reverse sides are golden and chicken is cooked through, 3-5 min. In a 9x13 inch baking dish, add peppers and top with chicken.

  4. Heat oven to 300. Pour reserved marinade over chicken-pepper mixture toss to coat. Bake uncovered until heated through, 20-25 min. Sprinkle with almonds and parsley.
