Baked Halibut with Zucchini and Tomatoes

Recipe Ingredients for Baked Halibut Steaks

0.33 tbsp Olive Oil
1/2 cup, chopped Squash, Summer, Zucchini, Includes Skin
1/4 cup, chopped Onions
1 clove Garlic
1 cup, chopped or sliced Tomatoes, Red, Ripe
1 tbsp Basil, Fresh
0.13 tsp Salt, Table
0.13 tsp Pepper, Black
2 tbsp Crumbled Goat's Milk Feta Cheese
4 serving Halibut (3 ounces)

Recipe Directions for Baked Halibut Steaks

  1. 1 Teaspoon Olive Oil

  2. 1/2 Cup diced zucchini

  3. 1/2 Cup minces onion

  4. 1 Clove garlic

  5. 1 Cup diced fresh tomatoes

  6. 1 Tablespoon chopped fresh basil

  7. 1/8 Teaspoon Salt

  8. 1/8 Teaspoon Pepper

  9. 2 (6 ounce) Halibut steaks

  10. 2 Tablespoons Crumbled Goat Cheese

  11. Preheat oven to 450 degrees. Lightly grease a shallow baking dish

  12. Heat olive oil in a medium saucepan over medium heat. Stir in zucchini, onion, and garlic. Cook and stir 5 minutes or until tender. Remove saucepan from heat and mix in tomatoes, basil, salt and pepper

  13. Arrange halibut steaks in a single layer in the prepared baking dish. Spoon equal amount of zucchini mixture over each steak. Top with cheese

  14. Bake 15 minutes (First 8 minutes covered with foil)
