Baking in a slow oven is the best way to cook large lima beans, which can fall apart easily if boiled too hard.

Recipe Ingredients for Baked Giant Limas with Winter Squash & Sage

2 serving Extra Virgin Olive Oil
1 cup, chopped Onions
4 clove Garlic
16 oz Lima Beans, Large, Mature Seeds
9 cup (8 fl oz) Water
16 oz Squash, Winter, Butternut
2 tsp Salt, Table
0.5 tsp Pepper, Black
2 tablespoon Sage
0.6 grams Bay Leaf
1 tablespoon Sage
1 tablespoon Thyme
1 sprigs Parsley
1 oz Parmesan, Hard Cheese

Recipe Directions for Baked Giant Limas with Winter Squash & Sage

  1. Preheat oven to 325 degrees. Heat the olive oil over med heat ina large, heavy casserole dish of Dutch oven and add the onion. Cook, stirring often, until tender, about 5 mins. Stir in half the garlic & cook, stirring, until it is fragrant, 3- secs to a min. Add the beans, water & the bouquet garni(a bay leaf, a Parmesan rind & a srpig each of sage, thyme & parsley), & bring to a simmer. Cover & place in the oven for 45 mins.

  2. Remove the casserole fromt he oven & stir in the remaining garlic, the winter squach, & salt to tast. If the mixture seems dry, add a little more water. Return to the oven & bake an hr longer, on until the beans squash are very tender. Remove from the heat & remove the bouquet garni. Adjust salt, add pepper to tast & stir in the slivered sage.
