Recipe Ingredients for Baked German Pancake with Blueberry-Banana Topping

2 tbsp Smart Balance Light
6 large eggs
1 cup skim milk
1/2 tsp salt
1/8 cup butter, melted
1/8 cup Smart Balance Light, melted with butter above
1 pint blueberries
1/2 cup confectioners' sugar
1 tbsp lemon juice
1 large banana, peeled, diced

Recipe Directions for Baked German Pancake with Blueberry-Banana Topping

  1. Heat oven to 450 degrees. Grease the pans with the Smart Balance in two 10- or 12-inch iron skillets. Break eggs into a blender. Add milk and salt; blend until mixed but not frothy. Add he flour; blend briefly to moisten. Do not over mix. Add butter and blend briefly.

  2. Divide the batter between the prepared pans. Bake until puffed; 10-12 minutes. Do not open oven. Reduce temperature to 350 degrees; bake until golden brown, about 10 minutes.

  3. Meanwhile, for topping, mix blueberries, confectioners' sugar and lemon juice. Mash briefly. Let stand for 2 minutes. Stir in banana.

  4. To serve, cut the pancakes into large wedges and pass around the topping.
