3 1/2 lbs butternut squash (1 large), peeled and cut into 1-inch dice
1/3 cup olive oil
2 garlic cloves, minced
2 tablespoons minced fresh parsley
1 Salt to taste
1 Freshly ground pepper
1/3 cup grated parmesan cheese

Recipe Directions for Baked Garlicky Butternut Squash

  1. Preheat the oven to 400 degrees

  2. In a large bowl, tos together the squash, olive oil, garlic, parsley, salt, and pepper.

  3. Spoon the vegetables into a 12 x 7 x 2 inch Pyrex dish or other shallow 2 1/2-quart baking dish. Sprinkle on the Parmesan cheese. Bake
