Recipe Ingredients for Baked Fruit Oatmeal

3 cups old fashioned oats
1/2 cup packed brown sugar
2 tsp baking powder
1/2 tsp salt
3 eggs
1 1/4 cup skim milk
1/4 cup canola oil
1 tsp vanilla
15 oz. sliced peaches in juice (no sugar added), chopped and drained
1 cup fresh or frozen blueberries
1/3 cup chopped walnuts

Recipe Directions for Baked Fruit Oatmeal

  1. Combine oats, sugar, baking powder and salt in one large bowl.

  2. In a smaller bowl, whisk eggs, milk, oil and vanilla; add to dry ingredients. Let stand 5 minutes. Stir in fruit.

  3. Transfer to an 11x7 baking dish coated in non-stick cooking spray. Sprinkle with nuts. Bake uncovered at 350* for 35-40 minutes or until lightly browned and a thermometer reads 160*. Serve with additional milk if desired.
