Fish baked with veggies and tomato sauce

Recipe Ingredients for Baked Fish

4 oz halibut
3 tbsp. tomato sauce
3 oz. potato
1/2 cup green beans

Recipe Directions for Baked Fish

  1. Spray small casserole or foil piece with Pam

  2. Spread with thinly slice potato. Season with salt and pepper.

  3. Top with veggies and fresh herbs (any combination of parsley, cilantro, lovage, fennel fronds, dill, etc.)

  4. Place fish on top and season with s & p or old bay seasoning. Top with tomato sauce. Cover, or wrap completely in foil and bake at 400 F for 30 - 45 min.
