Version of baked potato soup - bulked up with cauliflower.

Recipe Ingredients for Baked Faux-tato Soup

1 head, medium (5-6" dia) Cauliflower
2 Potato large (3" to 4-1/4" dia) Potatoes, Russet, Flesh And Skin
3 cup Soup, chicken broth, canned, less/reduced sodium
1.5 cup Milk, Nonfat, Fluid
8 tbsp Light Sour Cream
5 medium slices, cooked (raw product packed 20/lb) Pork, Cured, Bacon

Recipe Directions for Baked Faux-tato Soup

  1. Pierce potatoes with a fork; microwave on high for 5 minutes turn over and microwave another 3 - 5 minutes, until tender. Cool. Roughly cut potatoes into cubes (skin on).

  2. While potatoes are cooking, fry the bacon (for partial garnish or in soup).

  3. Meanwhile, steam cauliflower with water in a large covered pot until tender. Drain and return to pot. On medium heat, add chicken broth, milk, potatoes and bring to a boil. Use an immersion blender to puree until smooth. Add sour cream, half the chives, salt and pepper and cook on low another 5-10 minutes, stirring occasionally.

  4. Remove from heat.
