a healthy version of an old favorite

Recipe Ingredients for Baked Falafel

1 3/4 cup chickpeas
2 tbsp tahini
2 tbsp besan
2 tbsp lemon juice
1/4 cup oat bran
1/8 cup flaxseed meal
1/2 cup parsley, chopped
1/2 cup leek, chopped

Recipe Directions for Baked Falafel

  1. Preheat oven to 350.

  2. Mix chickpeas and other ingredients in food processor. Add onions and garlic and blend.

  3. Shape into ping pong size balls and place in preheated baking dish. Bake for 15-20 minutes, turning halfway through cooking.
