Flavourful patties made with chickpeas and lentils.

Recipe Ingredients for Baked Falafel

230 g chickpeas, canned or cooked with salt
140 g red lentils, cooked without salt
2 tsp extra virgin olive oil
3 cloves garlic
1/2 medium onion, sliced
2 g ginger, grated
2 tbsp chopped parsley
2 tbsp chopped cilantro
1/4 tsp salt
1 pinch of lemon pepper
1 tsp baking powder
30 g wholewheat flour
1 tbsp couscous, dry
2 tbsp water

Recipe Directions for Baked Falafel

  1. Sauté garlic, onions and ginger in 1/2 tsp of olive oil.

  2. Place all ingredients (except oil) in blender/food processor and pulse till just blended not smooth/puréed.

  3. Preheat oven to 200C.

  4. Shape purée into 10 balls, flatten to form patties, place in a baking dish & brush each with very little of the remaining oil. Bake for abt 40min until a crust forms. Turn halfway through cooking time.
