yummy baked falafel. i don't trust the calorie content, however.

Recipe Ingredients for baked falafel

2 cups cooked chickpeas
1/4 cup onion, chopped
1/4 cup parsley, or cilantro, fresh, chopped
3 garlic cloves, minced
1 tsp ground cumin
1/4 tsp ground coriander
1/4 tsp salt
1/4 tsp baking soda
1 tbsp all-purpose flour

Recipe Directions for baked falafel

  1. preheat oven to 400.

  2. mash all ingredients and form into four patties.

  3. brown in oven safe skillet for two minutes each side then bake in oven for 10-12 minutes.

  4. serve with whole wheat pita, hummus, cucumber-yogurt dressing and fresh tomatoes.
