Recipe Ingredients for Baked Eggs in Tomatoes

4 large whole (3" dia) Tomatoes, Red, Ripe
0.5 cup Corn, Sweet, Yellow
2 tsp chopped Chives
0.25 cup Parmesan, Grated Cheese
4 large Egg, Whole
4 dash Pepper, Black

Recipe Directions for Baked Eggs in Tomatoes

  1. Preheat oven to 350. Line a 9-inch baking dish or pie plate with parchment paper.

  2. With a serrated knife, cut off the top 1/2 inch from each tomato. With a spoon or melon baller, gently remove seeds and inner membrane, being careful not to break through flesh of tomato. Place tomatoes in dish and sason with pepper.

  3. Divide corn among tomatoes.

  4. In a medium bowl, whisk together eggs, salt, and chives. Divide egg mixture among tomatoes and top with cheese.

  5. Bake until egg mixture is set (45-50 minutes). Serve warm.
