This is a great make-ahead breakfast. Just cut a slice and microwave for 30-45 seconds.

Recipe Ingredients for Baked Eggs w/ bacon & turkey

1 lb ground turkey
1 lb canadian bacon
1 1/2 lbs mushrooms, sliced
2 tablespoons olive oil
29 green onions, chopped
1 cup shredded parmesan cheese
32 eggs
3/4 cup milk

Recipe Directions for Baked Eggs w/ bacon & turkey

  1. Brown the turkey, breaking it up as it cooks; set aside in large bowl.

  2. Cut the bacon into 1/2" pieces and brown; add to browned turkey.

  3. Saute mushrooms in olive oil; add to browned meat.

  4. Stir chopped green onions & shredded parmesan cheese into meat mixture.

  5. Season with black pepper.

  6. Divide evenly between 3 medium baking dishes that have been sprayed with a non-stick coating. The meat should be approximately 1 inch up the side, so depending how big your baking dishes are, may need to adjust.

  7. Beat eggs & milk together.

  8. Pour evenly over meat.

  9. Bake at 300F for about 45 minutes. Time may vary depending on size of baking dish(es) and how deep the egg/meat mixture is.
