0.5 cup Italian Classics Bread Crumbs
10 oz Eggplant
0.5 1tsp Olive Oil
1 large Egg, White

Recipe Directions for Baked Eggplant Sticks

  1. Slice eggplant into 1/4 inch sticks

  2. Dip strips in 1/2 tsp. of olive with a pinch of salt and pepper

  3. Dip strips in egg whites

  4. coat strips in bread crumbs and parmesan

  5. bake at 450 for 10 min, turn them over and bake again for about 5 min or until golden brown
