Variation of my eggplant lasagna with out the dairy

Recipe Ingredients for Baked eggplant

4 Eggplant
1 large Onions
1 oz Peppers, Sweet, Green
6 medium Tomatoes
6 clove Garlic
1/2 lb Beef, Ground, 95% Lean Meat / 5% Fat, Crumbles
2 oz Wine
1 oz Basil, Fresh

Recipe Directions for Baked eggplant

  1. Baked the eggplant in a single layer.

  2. Cook the onion untill translucent, then add the meat and garlic and cook untill brown, add wine and peppers, let reduce and add the tomatos and bay leaves. Simmer slowly and turn heat off. Add fresh basil.

  3. LAyer eggplant and meat sauce untill all finished and bake the eggplant again for 10 to 15 minutes.

  4. yeld 12 servings

  5. Let cool down a bit, about 15 minutes.
