Recipe Ingredients for Baked eggplant

1 eggplant, peeled and cut into 3/8 inch slices
4 tbsp fat free mayonnaise
4 tsp lemon pepper
4 tbsp parmesan cheese

Recipe Directions for Baked eggplant

Coat each side of eggplant with mayonnaise and dust with lemon pepper and Parmesan cheese. Place on Teflon coated pan and bake at 450 degrees for 8 to 10 minutes. Serves 2 slices per person.
