Recipe Ingredients for Baked Eggplant

1/2 medium eggplant, sliced to about 8 slices
4 weetabix biscuits, ground
1/4 cup egg beaters

Recipe Directions for Baked Eggplant

  1. Dip slices in eggbeaters.

  2. Coat with ground cereal.

  3. Bake in oven at 375 for 30 minutes.

  4. *For parmigianna make stacks (eggplant, tbsp sauce, ounce soy mozzarella, repeat). Bake in oven at 375 until cheese melted and eggplant heated through. 2 pieces eggplant, sauce, and soy cheese is approx 200 calories (depends on sauce used).
