Recipe Ingredients for Baked Eggplant Parmesan

1 (pound) fresh eggplant
2 cup Panko bread crumbs
1/2 cup egg beaters
2 cup tomato sauce
1 1/2 cup Mozzarella cheese, part skim

Recipe Directions for Baked Eggplant Parmesan

  1. Peal and slice eggplant lengthwise 1/4 inch thick

  2. Mix 1/4 cup water with egg beaters and place in a shallow bowl

  3. Place bread crumbs in bag and add spices to taste, garlic, Italian seasoning, etc. Mix and pour onto a 10inch plate.

  4. Spray baking sheet with Non-stick spray (Pam)

  5. Dip eggplant in egg and then press into bread crumbs.

  6. Place on baking sheet, spray top with nonstick spray

  7. Bake in 400 degree oven for 20 minutes.

  8. Spread 1/2 cup of tomato sauce in bottom of casserole dish.

  9. Lay cooked eggplant on top of sauce, spread 1/2 cup of sauce on top, and 1/2 cup shredded cheese

  10. Repeat layers till eggplant is gone. Omit cheese from top layer. Cover with foil and bake in a 375 oven for 55 minutes.

  11. Remove foil and top with remaining 1/2 cup of cheese. Return to the oven for 5 minutes to melt cheese.
