Recipe Ingredients for baked eggplant parmesan

1 large eggplant
1/2 cup panko bread crumbs
1 egg
1/2 cup parmesan cheese
8 ounces fresh mozzerella
2 cups pasta sauce

Recipe Directions for baked eggplant parmesan

  1. preheat oven to 350 degrees

  2. beat egg and place panko in a shallow tray

  3. peel and slice eggplant thinly

  4. dip eggplant in egg wash and then dip into panko covering completely

  5. bake in the oven for about ten to fifteen minutes until eggplant is firm but tender and panko is browned

  6. spray 8x8 dish with nonstick spray and layer eggplant, then sauce, then mozzerella, then parmesan cheese.

  7. form each layer until eggplant is gone or you get three layers.

  8. bake in oven at 350 degrees for twenty minutes. or until top is brown and crusty.
