Excellent substitution for meat with spaghetti.

Recipe Ingredients for Baked Eggplant Parmesan

1 medium eggplant
4 slices light wheat bread, toasted
2 egg whites
2 T skim milk
4 T parmesan cheese
16 ounces marinara sauce

Recipe Directions for Baked Eggplant Parmesan

  1. Preheat oven to 400 degrees.

  2. Pulse toasted bread, 2 T parmesan cheese and seasonings (oregano, parsley, basil, salt, pepper, etc. to your taste) until fine. This will be used as the coating for your eggplant.

  3. While pulsing, peel eggplant and slice lengthwise into 1/4" thick sections.

  4. Mix together egg whites and milk. Dip eggplant slices first into egg mixture and then into breading. Double dip if you like extra breading.

  5. Place on a baking sheet coated with nonstick cooking spray. Give the eggplant a good spray of nonstick cooking spray.

  6. Bake at 400 degrees for about 20 minutes or until lightly browned.

  7. Serve, topped with marinara sauce on a bed of low-calorie wheat pasta (if calories allow, not included in nutrition facts). Top with 1/4 T parmesan cheese per serving.
