Recipe Ingredients for Baked Eggplant Parmesan

2 eggplant, unpeeled (approx 1-1/4 lb) Eggplant
16 oz Mozzarella Fresh Cheese
56 oz Whole Peeled Tomatoes
1 medium Onions
4 clove Garlic
0.5 cup, grated Carrots
6 tsp Thyme, Fresh
4 tbsp Extra Virgin Olive Oil
1/2 cup Panko
0.25 cup Parmesan, Grated Cheese
1 cup leaves, whole Basil, Fresh

Recipe Directions for Baked Eggplant Parmesan

  1. First make the sauce. Sauté thinly sliced onions and garlic in the olive oil over medium heat until softened but not browned, about 8 minutes.

  2. Add the carrots and thyme. Cook for 5 minutes or until the carrot is softened.

  3. Add the whole tomatoes and bring to a oil. Lower to a simmer and then cook, stirring every so often, about 30 minutes until thickened.

  4. Smash the tomatoes well in the pot or use an immersion blender to purée.

  5. In the mean time, heat the oven to 450'F. Slice the eggplant into 1/4-inch thick slices.

  6. Lightly oil a baking sheet or two. Place the eggplant slices on the sheet and season with salt and pepper.

  7. Baked for 12-15 minutes until softened and lightly browned.

  8. Lightly oil a large baking dish (9x13x2). Place 6 slices on the bottom of the dish. Top with tomato sauce. Then place chopped basil on the slices, followed by thinly sliced mozzarella. Repeat the layering process until there are approximately 4 layers of eggplant.

  9. Top the stacks with Parmesan and panko.

  10. Bake for 30-40 minutes at 350'F until the eggplant is cooked through and the cheese and panko is browned on top.

  11. Serve with a side salad, red wine (Tempranillo was great!), and friends.
