My lower fat version of the fried eggplant parmasean found in italian restaurants. Serve over whole wheat spaghetti noodles.

Recipe Ingredients for Baked Eggplant Parmasean

2 medium eggplant, peeled and sliced thin
3 cups marinara sauce
2 cups mozzarella cheese, shredded
1 cup seasoned bread crumbs

Recipe Directions for Baked Eggplant Parmasean

Rub bottom of 13x9" pan w/ olive oil. Arrange a layer of eggplant in the bottom of the pan to cover. pour over 1/3 of the marinara sauce and 1/3 of the cheese. Repeat until last layer is topped w/cheese. Sprinkle bread crumbs over the top and bake at 400 degrees for about an hour.
