A healther take on a favorite eggplant recipe

Recipe Ingredients for Baked Eggplant Parm

1 small eggplant, sliced 3/4" thick, with skin
1 large egg
1 cup seasoned bread crumbs
1 cup tomato sauce
1/2 cup low fat mozzarella, shredded

Recipe Directions for Baked Eggplant Parm

  1. Wash an slice the eggplant. Sprinkle each sideof each slice generously with salt and place on a rack to draw the excess moisture, about 15 minutes.

  2. Rinse the slices and pat dry.

  3. Beat the egg.

  4. Dip each slice of eggplant in the egg, then in the bread crumbs, coating the top and bottom.

  5. Arrange 1/2 the slices in a baking dish.

  6. Spoon 1/2 the sauce over and sprinkle with 1/2 the cheese.

  7. Repeat.

  8. Bake at 375 for 30 minutes.
