Recipe Ingredients for Baked Eggplant Mozzarella

2 eggplants
3 eggs
24 grams soft bread crumbs
340 grams tomato sauce
1 onion

Recipe Directions for Baked Eggplant Mozzarella

Cut eggplant into thick slices, no need to peel. Dip slices in stirred eggs. Then coat with soft bread crumbs. Broil breaded eggplant slices until dark on both sides. Place a small slice of onion on each. Then place a dab of tomato sauce. Make a second layer or more. Bake at 350 degrees for 15 minutes to heat through.
