Recipe Ingredients for Baked Eggplan Rollatini

1 lb eggplant
1 egg
0.78 c dried bread crumbs
2 c tomato sauce
1/2 lb cheese
1 c ricotta cheese

Recipe Directions for Baked Eggplan Rollatini

  1. Slice eggplant

  2. Dredge in egg & milk

  3. Broil

  4. Mix ricotta and jack cheese

  5. Fill each slice with 2 Tbs

  6. Put a bit of sauce on bottom of pan (adding 1C water to the tomato sauce), place eggplant on top, top with sauce and some more grated cheese.

  7. Bake 350 or until warm through
