Very good healthier take on an italian dish.

Recipe Ingredients for Baked Egglant Parmesan

16 oz eggplant
1/2 cup egg whites
2/3 cup skim milk
1/8 cup grated parmesan cheese
1 1/2 cups bread crumbs
1 tbsp garlic powder
2 tsp dried sweet basil
1 tbsp onion powder
1 tsp italian seasoning
2 oz Parmigiano Reggiano cheese

Recipe Directions for Baked Egglant Parmesan

  1. Spray pan (I use glass deep dish) with spray olive oil.

  2. Slice eggplant 1/2 inch thick.

  3. Combine eggs and milk and mix well.

  4. Combine spices, parmesan, and bread crumbs, mix well.

  5. Dip eggplant in egg mixture, then dredge in bread crump mixture.

  6. Place covered eggplant in dish. Spray oil very lightly on top.

  7. Bake for 30-45 mins, until tender.

  8. After arranged on plate, sprinkle wih parmigiano

  9. Serve over pasta with tomato sauce.
