Recipe Ingredients for Baked Egg Puffs

2 large eggs
4 large egg whites
1/2 cup butternut squash
2 tbsp cheddar cheese
2 tablespoons flour
1/2 tsp baking powder
1/4 tsp salt

Recipe Directions for Baked Egg Puffs

  1. Preheat oven to 400 degrees F. Coat 4 ramekins or coffee cups with cooking spray and set on baking dish.

  2. In a large bowl, whisk all ingredients until combined. Divide mixture into ramekins or coffee cups and bake until tops are puffed up and eggs are no longer runny in the center when pierced with the tip of a knife, 13 to 15 minutes. Serve immediately.
