Recipe Ingredients for Baked Egg Puffs

2 eggs
4 egg whites
4 ounces butternut squash
1 ounce cheddar cheese
2 tablespoons flour
1/2 teaspoon baking powder
1/4 teaspoon salt

Recipe Directions for Baked Egg Puffs

  1. Preheat oven to 400. Coat 2 1-cup ramekins or coffee cups with cooking spray and set on baking sheet.

  2. In large bowl, whisk eggs, egg whites, puree, cheese, flour, baking powder, and salt. Divide among ramekins/cups and bake until tops are puffed up and eggs are no longer runny in the center -- 13 to 15 minutes. Serve immediately.
