A really yummy breakfast - this keeps me going all morning...porridge never does!

Recipe Ingredients for Baked egg delight

65 g egg
1 egg white
1/4 cup frozen spinach
1/2 tomato
1 tablespoon reduced fat ricotta cheese
1/2 teaspoon parmesan cheese

Recipe Directions for Baked egg delight

  1. Select a small dish thats oven proof about the size of a cup.

  2. Spray dish with oil.

  3. Place thawed spinach in dish

  4. Crack egg ontop

  5. Slice tomato and lay on top of egg

  6. Dob the ricotta cheese over it.

  7. Sprinkle some parmesan for extra flavour.

  8. Bake at 200 degrees celsius for about 15 minutes (I put it in the oven whilst I go for my shower!).

  9. Enjoy!
