Recipe Ingredients for Baked Egg Cups

6 oz black forest ham
3/4 cup egg beaters
1 oz diced raw mushrooms
1 oz diced raw red bell pepper
1 sliced green onion
1 Pam cooking spray

Recipe Directions for Baked Egg Cups

  1. heat oven to 350

  2. spray 6 muffin cups with pam

  3. line each muffin cups with one slice of ham

  4. bake for 10 minutes

  5. fill each muffin cup with 1/8 cup egg beaters

  6. sprinkle with salt and pepper

  7. top with mushrooms, pepper and green onion

  8. bake for 10-15 minutes
