Recipe Ingredients for Baked Doughnuts

1/2 cup whole wheat flour
1/2 cup spelt flour
3/4 tsp baking powder
3/4 tsp baking soda
1/4 tsp table salt
1 egg
1 tbsp canola oil
1/2 cup plain fat-free yogurt
2 tsp lemon juice
1 tsp vanilla extract
4 T honey

Recipe Directions for Baked Doughnuts

  1. In a big bowl, combine flours, sugar, baking powder & soda & salt, set aside.

  2. Combine yogurt, oil, egg, lemon juice & vanilla.

  3. Push the flour to the side and in the center, add in (B). Mix (B)into the flour just to combine. Set aside.

  4. Spray the donut pan (can use mini bundt pan or muffin pan) with nonstick cooking spray. Divide batter among pans.

  5. Bake at 400F for 10 minutes or until a toothpick inserted near the center comes out clean. Cool for 5 minutes before removing from pans to wire rack.
