Recipe Ingredients for Baked Custard

3 eggs
1/3 cup sugar
1/8 teaspoon salt
1 teaspoon vanilla
2 1/2 cups skim milk (scalded; heated to almost boiling)
1/8 teaspoon nutmeg

Recipe Directions for Baked Custard

  1. Heat oven to 350.

  2. Scald the milk.

  3. Mix eggs, sugar, salt and vanilla. Stir in milk gradually. Pour into 6-6 ounce custard cups; sprinkle with nutmeg. Place cups in oblong pan, 13x9x2 inches, on oven rack. Pour very hot water into pan within 1/2 inch of tops of cups.

  4. Bake until knife inserted half way between center and edge comes out clean, about 45 minutes. Remove cups from water and serve warm or chilled.
