Crab and Artichoke Dip made with cream cheese and red bell pepper

Recipe Ingredients for Baked Crab Dip

90 g artichoke hearts
280 g lump crab meat
120 g red bell pepper
250 g soft cream cheese
35 g miracle whip
175 g cheese

Recipe Directions for Baked Crab Dip

  1. Preheat oven to 350 F

  2. Finely chop one large artichoke heart

  3. Chop the body meat of approx 6 dungeness crabs (about 2 cups)

  4. Finely slice 1 medium red bell pepper, reserve 2/3 for garnish and mince the remaining portion

  5. Grate approx. 2 cups of cheese, (farmers marble, medium cheddar or similar)

  6. In a medium mixing bowl combine crab meat, artichoke heart, red pepper, soft cream cheese, 1/3 of the cheese, 1-2 tsp of lemon juice, 1-2 tsp fancy prepared mustard, ground black pepper and salt. Mix with a soft spatula or spoon until thoroughly blended. Adjust spices to taste (amounts listed are minimal).

  7. Divide dip between two 8" pie plates or other oven safe baking dishes. top with remaining cheese and reserved bell pepper.

  8. Bake 25-30 minutes or until done.

  9. Serve hot/warm with choice of dipable food stuffs (fresh zucchini slices are divine.
