A cross between cornbread and stuffing, this flavorful bread can also be made with corn grits for a polenta-like side dish. I use the gluten free pancake mix for a yummy wheat-free bread.

Recipe Ingredients for Baked Cornbread Stuffing Bread

1/2 cup Bisquick or Bob's Red Mill Gluten Free Pancake Mix
1/2 cup corn meal
1 egg
1 cup plain yogurt or kefir
1/2 onion, diced
1 stalk celery, diced
1/2 apple, diced
1 tbsp olive oil
1/4 tsp black pepper
1/4 tsp tarragon
1/4 tsp sage

Recipe Directions for Baked Cornbread Stuffing Bread

  1. mix dry baking mix and corn meal

  2. beat egg, mix with yogurt

  3. combine wet and dry ingredients and let stand

  4. saute onion, celery and apple in olive oil

  5. add spices

  6. fold vegetables into dough

  7. bake in pie pan or 9 ' square pan

  8. 350 degrees for 30-40 minutes
