Codfish baked in onions and peppers

Recipe Ingredients for Baked Cod

2 lbs. haddock or cod
1 c. sour cream
1/2 c. freshly grated Parmesan cheese
1 tsp. dill
1 tbls lemon juice
1/4 tsp Paprika
1/4 tsp Salt
1/4 tsp black pepper
1 c sliced onion
1 c sliced red pepper
2 sliced cloves garlic
1 Lemon wedges, parsley for garnish
6 chopped plum tomatoes

Recipe Directions for Baked Cod

  1. Preheat oven to 375 degrees.

  2. Lightly grease shallow baking dish.

  3. Place fish in single layer in baking dish.

  4. In separate bowl, stir and blend well the sour cream, Parmesan cheese, dill and salt and pepper.

  5. With spatula, evenly spread mixture over fish.

  6. Drizzle lemon juice over fish.

  7. Sprinkle paprika over dish.

  8. Bake about 20 minutes or until fish just begins to flake when touched with fork.

  9. Garnish and serve immediately.

  10. Serve with rice and fresh seasonal veggies.
