Pretty Simple Portuguese Meal, delicious and good for you. Yes I do mean punch potatoes (the name doesn't sound so funny in portuguese)

Recipe Ingredients for Baked Cod with Olive Oil, with punch Patotoes on the Side

1 oz Cod, Atlantic, Dried And Salted
1 tbsp Olive Oil
1 skin Potatoes, Baked, Skin
1/2 cup, chopped Broccoli

Recipe Directions for Baked Cod with Olive Oil, with punch Patotoes on the Side

  1. You need to keep the cod (dried and salted) in water for about 1 day, and make sure to change the water at least 3 times, to get rid of the salt. The cod will still have salt, just in a amount thats edible. On to the cooking: spread the cod steaks on a tray, and drench it in olive oil so that it's hal covered. You can put some garlic if you like, but don't bother with salt, since the cod hasn't lost all of it. Let it bake slowly at medium temperature until the top layer is nice and golden. The potatoes are baked seperatly. Take another tray, wash the potatoes and rub them with thick salt, put them in the trey and let them bake until the skin is brown and you can see you can just brush away the salt. Take them out and with your hand brush away the salt until it's completely gone. This way the potatoes have a nice taste but without the salt overload. Then you put the potatoe on the counter and smash it with the palm of your hand. The potatoe doesn't desintegrate since it was baked, it just looks like it was punched (hence the name).

  2. While all this is going on, wash the brocolli and put it in a pan with water to boil. When it's done just take it and put it in a tray. When the cod is done take it out. On a plate you put the cod (without the olive oil) a potatoe and the brocolli and with a tabelspoon you take a bit of that olive oil the cod baked in and condiment your plate.

  3. In the end you get a meal that actually doesn't use much salt or olive oil, but still has a great taste.
