Recipe Ingredients for Baked Cod with Macadamia Nut Crust

75 g macadamia nuts
1 tbsp flour
50 g breadcrumbs
40 g butter
1 tbsp walnut oil
720 g cod

Recipe Directions for Baked Cod with Macadamia Nut Crust

  1. Preheat oven to 220 C, gas mark 7. Roast 75 g coarsely chopped, unsalted macadamia nuts for 5 minutes until toasted.

  2. In a bowl, ix 1 tbsp plain flour, 50 g fresh white breadcrumbs and 40 g melted butter and the toasted nuts.

  3. Brush 4 x 180 g skinless cod fillets with 1 tbsp walnut oil, season with salt and peppar and top each fillet with the nut mixture.

  4. Bake in oven for 7-9 minutes until the crust is golden brown and the fish is cooked through. Serve with a squeeze of lemon and some wilted spinach and roasted tomatoes.
