Recipe Ingredients for Baked Cod Fillet with Tomatoes

5 ounces cod
2 teaspoons olive oil
3 tablespoons vegetable broth
2 tablespoons lemon juice
1 sliced roma tomato
1 cup steamed broccoli
1/4 cup black beans

Recipe Directions for Baked Cod Fillet with Tomatoes

  1. Season fish with salt and pepper (or lemon pepper to avoid adding sodium).

  2. Place in baking dish and top with oil, broth, lemon juice and tomato.

  3. Bake at 375 for 20 minutes or until fish is cooked through.
