Recipe Ingredients for Baked Cod with Cherry Tomatoes, Artichokes & Olives

12 oz Tomatoes
2 serving (Reese) Quartered Artichoke Hearts
4 oz Olives
1/2 cup chopped raw Shallots
2 oz Wine, Table, White
1.33 serving (Fairway) Extra-Virgin Olive Oil, Catalan Arbequina
2 clove Garlic
1 tsp Thyme, Fresh
1/2 tsp Sodium-Free Salt
2 tbsp Basil, Fresh
4 portion Steam Series Cod Fillets

Recipe Directions for Baked Cod with Cherry Tomatoes, Artichokes & Olives

  1. Adjust an oven rack to the middle position and pre-heat the oven to 450 degrees. Toss the tomatoes, artichokes, olives, shallots, wine, 2 teaspoons of the oil, garlic, thyme, 1/4 teaspoon salt, and 1/4 teaspoon pepper together, then spread evenly into a 9x13 baking dish.

  2. Pat the cod dry with paper towels. Nestle the fillets into the tomato mixture, brush the top of the fish with the remaining 2 teaspoons oil, and season with salt & pepper.

  3. Bake until the fish flakes apart when gently prodded with a fork or paring knife, 20-25 minutes. Sprinkle with the basil and serve with lemon wedges.
