Baked Cinnamon-Apple French Toast Recipe

A whole-food version of MSN's recipe. Previous Night Preparation: Needs to be refrigerated for at least 8 hours before baking. If using olive oil for dish prep, add 1/2 Tbs to calorie count.

Recipe Ingredients for Baked Cinnamon-Apple French Toast

2 cups MILK
3 large EGGS
3 tbs HONEY
1 1/2 tsp VANILLA EXTRACT
1/4 tsp SALT
16 slices WHOLE-WHEAT BREAD
1 cup CHOPPED APPLE
1/2 cup RAISINS
1 1/2 tsp CINNAMON
1/2 tsp NUTMEG
1 tbs CONFECTIONER'S SUGAR

Recipe Directions for Baked Cinnamon-Apple French Toast

  1. Whisk mild, eggs, honey, vanilla and salt in a large bowl.

  2. Trim crusts off of 8 of the slices of bread and set the slices aside. Cut the crusts and the remaining bread into 1-inch pieces. Toss the cut bread with the apples, raisins, cinnamon and nutmeg in a large bowl.

  3. Prepare a 9X13 baking dish with cooking spray or a light coating of olive oil. Transfer the bread mixture into the pan. Lay the reserved trimmed slices evenly over the top, trimming to fit.

  4. Press the bread down with a wooden spoon, making sure it's evenly moist. Cover with parchment paper, then foil and refrigerate for at least 8 hours or up to 24 hours.

  5. Preheat oven to 350 deg F.

  6. Bake the casserole, covered, for 40 mins. Uncover and bake for an additional 20 mins until puffed, set and lightly browned. Let stand 10 mins and dust lightly with powdered sugar.
