A bit healthier than fried and very tasty. Great for left over meats, I generally prefer those which I have shredded.

Recipe Ingredients for Baked Chimis

21 oz chicken breasts
1 cup salsa
2 cups cheese
8 tortillas
2 avocados
4 tbs olive oil

Recipe Directions for Baked Chimis

cook chicken with salsa, shred chicken, warm tortillas, roll chicken and cheese in softened tortilla, wrap all ends. spray or rub olive oil or butter onto outside of tortillas, bake on cookie sheet until golden at 425, about 20 minutes, top with avocado or guacamole and salsa (fresh salsa, not the one the chicken was cooked in).
