Baked chicken with potatoes, green beans and summer squash

Recipe Ingredients for Baked chicken and vegetables

20 oz boneless skinless chicken breast
6 oz green beans
4 Yukon gold potatoes
1 yellow squash
1/2 zucchini
6 tbs olive oil
3 tbs lemon juice
3 cloves garlic
1 1/2 tsp salt
1/2 tsp pepper

Recipe Directions for Baked chicken and vegetables

  1. Mix the oil, lemon juice, minced garlic, salt and pepper in a large bowl.

  2. Toss the green beans in the mixture then transfer to a baking dish.

  3. Toss the diced potatoes in the oil mixture then place on top of the green beans.

  4. Toss the squash in the oil mixture then place on top of the potatoes.

  5. Bake at 400 F for 25 minutes.

  6. Meanwhile, Marinate the chicken breasts in the oil while the vegetables are cooking.

  7. After 25 minutes place the chicken on top of the vegetables and return to the oven for another 35 minutes or until the chicken is cooked.

  8. Allow the chicken to rest for 5 minutes before serving.
