Recipe Ingredients for Baked Chicken Tostada

1 tortilla, flour, baked
4 oz grilled chicken, pre-cooked and cubed
1/2 tsp paprika, spanish
1/2 tsp garlic salt
1/2 tsp olive oil, extra virgin
1/4 onion, sliced
1/4 sweet pepper, sliced
1/4 zucchini, sliced
1/4 cup mushroom, portabella, sliced
1 garlic clove, minced
1/4 cup refried beans
1/2 cup lettuce, shredded
1 tomato, diced
1 oz cheddar cheese, shredded
1/4 avocado, mashed
1 oz sour cream, light

Recipe Directions for Baked Chicken Tostada

Lightly spray flour tortilla with pam cooking spray. Cook until browned in 350 degree oven. In a large skillet add olive oil, onions and peppers; cook until tender. Add garlic, garlic salt and paprika; mix well. Continue cooking and add zucchini. Toss in mushroom and cook until mushrooms are just cooked. Finally, add chicken and toss until mixed thoroughly. Remove from heat. Warm refried beans with a little water to make a smooth consistency. Prepare lettuce, tomatoes, cheese. Mash avocado and add a dash of garlic salt. To assemble: Place baked tortilla on a large plate. Top with a layer of refried beans. Put vegetable and chicken mixture on top of refried beans. Add lettuce and tomatoes. Top with cheese, guacamole and sour cream.
