Modified Version from the Mediterranean Prescription

Recipe Ingredients for Baked Chicken & Tomatoes

14 oz Unico Diced Tomatoes
2 clove Garlic
12 oz Fresh Boneless Skinless Chicken Breasts
1/2 cup, shredded Mozzarella, Whole Milk Cheese
2 tbsp Olive Oil
1 Pepper, Black to taste
4 oz Wine, Table, Red

Recipe Directions for Baked Chicken & Tomatoes

  1. Turn oven on to 400F.

  2. Brown chicken in a pan with 1 tbsp of Olive Oil., and the garlic.

  3. Switch chicken into an oven safe dish and layer with tomatoes, cheese, the other tbsp of Olive Oil, wine and pepper.

  4. Bake until chicken is cooked. Maybe 25min. or so.
