Recipe Ingredients for Baked Chicken Sripes w/ Mustard, Almonds and Parmesan

8 oz. boneless chicken breast
2 T. low fat mayonaise
2 T. Dijon mustard
1 T. water
1/2 T. vinegar
1/2 t. garlic powder
1/2 t. poultry seasoning
2 T. parmesan cheese
3/4 c. almonds
1/4 t. black pepper

Recipe Directions for Baked Chicken Sripes w/ Mustard, Almonds and Parmesan

  1. Trim visible fat or tendons from chicken then cut into crosswise strips about 1 inch wide.

  2. Make a marinade by:whisking together mayo, Dijon, vinegar, water and poultry seasoning.

  3. Place chicken stripes and marinade ina plastic bag and marinate in refrigerator for 3-4 hours or as long as all day

  4. When ready to cook, let marinated chicken come to room temperature while oven pre-heats to 450 F.

  5. Use food processor to finely grind almonds to a meal consistency. Add parmesian, poultry seasoning and pepper along with almond mill to a large flat bowl.

  6. Spray a nonstick baking sheet well with a nonstick spray. Dip each chicken piece into coating< turning to coat both sides and arrange in single layer on baking sheet.

  7. Bake without turning for 10 minutes or until top side is quite browned and underneath is starting to brown. Then use metal turner and go under each piece of chicken to be sure it's not stuck to the pan< then carefully turn each piece. Some of the coating will fall off and possibly get too brown in the pan, so don't worry about it. Cook 10 minutes more until the chicken is well browned and cooked through.

  8. Serve hot. (Edit; if reheating this in the microwave, be very careful not to overcook or it will get very dry. It is best fresh from the oven.)
