Recipe Ingredients for Baked Chicken with Squash and Walnuts

1 1tsp Olive Oil
0.12 cup (8 fl oz) Water
0.33 tsp Cumin
0.25 tsp Paprika
1/4 teaspoon Red Pepper, Ground
0.12 tablespoon Oregano
2 pieces Boneless Skinless Chicken Tenderloins
0.5 cup Yellow Squash
0.5 potato medium (2-1/4" to 3-1/4" dia) Potatoes, White, Flesh And Skin
0.3 slice, medium (1/8" thick) Onions
0.125 cup Chopped Walnuts

Recipe Directions for Baked Chicken with Squash and Walnuts

  1. Preheat oven to 375 degrees.

  2. Coat a roasting pan or casserole with cooking spray.

  3. combine 1 tsp oil, 1 tsp water, pepper, paprika, cumin and oregano in a bowl. Add 1/2 tsp salt if desired.

  4. Brush chicken with prepared measure and place in the pan.

  5. Add squash, potato and onion in pan and pour remaining spice mixture over them, stirring to cover.

  6. Bake uncovered for 40 minutes, or until vegetables are cooked.

  7. Cover with walnuts and bake 10 additional minutes or until chicken registers 165 degrees.
