Baked flautas stuffed with seasoned shredded chicken, spinach and cheese. Crispy but not greasy or high in salt.

Recipe Ingredients for Baked chicken & spinach Flautas

1 pound boneless skinless chicken breast
16 oz low sodium chicken stock
2 cups water
1 tsp paprika
1 tsp garlic powder
1 tsp cumin
1 red pepper
3 cups baby spinach
9 flour tortilla
6 oz shredded cheese

Recipe Directions for Baked chicken & spinach Flautas

  1. Pre-heat oven to 400 degrees

  2. Put chicken breasts in deep sided saute pan and cover with stock and water.

  3. Bring to boil

  4. Reduce heat and simmer for 10 minutes

  5. Remove chicken and pour out all but 1/4 cup of the liquid

  6. Shred chicken and mix with spices

  7. Add pepper and spinach to liquid and cook over slow heat until spinach wilts.

  8. Cut tortillas in half.

  9. Spoon approx. 1 Tbsp of chicken along the long edge of a tortilla Repeat with spinach and cheese.

  10. Roll tortilla up starting with straight edge

  11. Place seam side down on baking sheet that has been sprayed with non-stick spray.

  12. Repeat with remaining tortillas

  13. Spray the tops of the tortillas with cooking spray.

  14. Bake at 400 for 10 minutes.

  15. Turn over - re spray with cooking spray

  16. Bake for 10 minutes or until crispy

  17. Serve with salsa
